This course is appropriate for students who will be exploring career paths in the health, nutrition and dietetics fields. This course starts with an exploration into the science of nutrition and builds on that as students explore the basics of planning a healthy diet. Readers then apply those basic scientific principles in a section on cooking skills, followed by an in-depth look at nutrients including their chemical structures, dietary sources, and impacts on health and disease.

Katie Ferraro, MPH, RD, CDE is a Registered Dietitian and Certified Diabetes Educator specializing in nutrition communications and curriculum development. She is the co-author of Diet Therapy in Advanced Practice Nursing (McGraw Hill, 2014) and is a freelance writer and consultant dietitian. Katie works with educational institutions, food products, and healthcare companies to help bring evidence-based, scientific information to the general public. She is an Assistant Clinical Professor of Nutrition at both the University of California San Francisco and the University of San Diego Schools of Nursing.
