Katie Ferraro, MPH, RD, CDE is a Registered Dietitian and Certified Diabetes Educator specializing in nutrition communications and curriculum development. She is the co-author of Diet Therapy in Advanced Practice Nursing (McGraw Hill, 2014) and is a freelance writer and consultant dietitian. Katie works with educational institutions, food products, and healthcare companies to help bring evidence-based, scientific information to the general public. She is an Assistant Clinical Professor of Nutrition at both the University of California San Francisco and the University of San Diego Schools of Nursing. Jessica Matthews is an assistant professor of health and exercise science at Miramar College, and associate kinesiology faculty at MiraCosta College.
